Slow cookers as they are colloquially called

Pressure cookers raise the boiling point of water. By applying pressure the boiling point of water can climb as high as 250 degrees Fahrenheit. This can decrease cooking time by up to two-thirds at normal elevation.Think of a pressure cooker as just a pot with a special lid. If you never attach the top, it’ll behave just like any other pot in your kitchen. A silicone gasket in the lid makes an airtight seal. This allows pressure to build in the pot, making water boil at a higher temperature and allowing food to cook much faster. The pressure is released through a valve at the top of the pot.

Electric pressure cookers, slow cookers as they are colloquially called, are quickly supplanting rice cookers, crock pots, and other one-function appliances in America’s kitchens because of their ability to make dinner in a hurry with little fuss. There are essentially two types of pressure cookers: electric and stovetop. For the purposes of this guide, we are going to focus on electric ones since they are much more popular and functional.

From the name you've learned to slow cook with over the years comes this multi-cooker that cannot only pressure and slow cook but it also lets you brown, sauté or steam. All of these functions can be set with a delayed timer so you can ensure a freshly done meal when you get home. With easy setting such as meat/stew, beans/chili, rice/risotto, yogurt, poultry, dessert, soup and multigrain you can cook up a whole feast of meals. With this purchase, you'll also get a recipe book with plenty of ideas, a steaming rack and a serving spoon to help whip up dinner in a jiffy. Plus, the cooking pot is dishwasher safe so cleanup is a breeze.

Electric pressure cookers are slower than the stovetop models, sometimes taking almost three times longer to reach pressure in our tests. But they're easier to operate, and once you get a sense of the time needed for your recipes, they should require less attention than stovetop models. Another advantage? The electric pressure cookers we tested also offer other cooking options, such as steaming or making rice. Electric pressure cookers are nearly silent for most of the cooking and are noisy only when pressure is released at the end of cooking. When the pressure releases, the contents of the pot can spray onto the lid and exterior, making cleanup a little harder because the electric part of the cookers can’t be submerged in water.
